Course overview

Level 1 will suit you if you’re starting and want a good basic understanding of the industry. You want a qualification that can help you with ongoing study or to find your first job in hospitality.

The course aims to provide you with the basic practical skills, knowledge and confidence in food preparation, cooking, and food and beverage service. You’ll develop relevant core skills for a career in the hospitality industry. You’ll gain practical experience training in our kitchens where you’ll learn how to prepare and cook a variety of fresh foods, customer service and food and beverage service techniques. You will complete several units from a range that includes:

  • Health, safety and hygiene
  • Knife skills and how to use kitchen equipment
  • Basic cookery: meat, fish, salad and sandwiches, cakes, bread and pastries
  • Healthy eating and the hospitality industry
  • Food and beverage skills
