Suffolk College Catering Students in Student Chef Challenge 2005 - 20 April 2005
On Wednesday 13 April two teams of full-time students from the Curriculum Centre of Catering and Hospitality at Suffolk College took part in the semi-final of the Southern and Midlands section of the Student Chef Challenge Competition 2005. The challenge was held at the Birmingham College of Food Technology.
The teams, lead by Chef Instructor Greg Cheeseman and supported by Senior Lecturer Pat Wright, were made up of two level 1 students and a level 3 team leader. (The other teams competing were made up of three level 3 students.)
One team from Suffolk College was successful and won a place in the final, which will be held at the Scottish Culinary Championship in Glasgow on Wednesday 27 April. The Championship is part of the ScotHot 2005 Culinary Exhibition - the largest catering exhibition in the UK in 2005.
The finalists will be required to plan, prepare, cook and present a three course meal for 4 people in one hour 45 minutes.
The Suffolk College team ( Lauren Gregg, Will Archer and Charlotte Girling, lead by Greg Cheeseman) will be cooking the following menu:
• Pink Peppercorn Lime Crusted Carpaccio of Fresh Tuna with Rocket Salad and Vanilla Balsamic Reduction
• Pan Fried Honey Glazed Suffolk Lamb, Sweet Potato Cake, Buttered Asparagus with Red Wine and Hot Mint Jus
• Apple and Rhubarb Open Strudel with a Ginger Cheesecake Mousse and Cinnamon Sabayon Sauce
