Students through to Regional Brakes Competitions

YOUNG CHEFS THROUGH TO REGIONAL FINAL OF BRAKES COMPETITION

Three catering students from Suffolk New College have been selected to take part in the Brakes student chef challenge at Westminster Kingsway College in London on Saturday 29 January 2011. This regional heat will see the students prepare a three course meal for a panel of judges.

The students were asked to design and submit a menu for four people at a cost of no more than £12 per head, sourcing local ingredients. They were given the opportunity to demonstrate their creativity and teamwork skills in producing this meal. The group of students from Suffolk New College were selected from numerous entries for the regional heat in London with a menu of:

Starter:           Aldeburgh Cod with red pepper crumb and chorizo risotto

Main:               Dingle Dell pork fillet with ginger and orange, beetroot puree, cashew, sage and onion bon bon and Aspall cider jus

Dessert:         Chocolate fondant with banana and lime spring roll with plum and apple sauce

The winners of the regional heats will go on to the grand final at ‘Scothot’ in Glasgow in March. Where they will compete to win a five day work experience placement with Christopher Basten, Executive Chef at the Marriott County Hall London Hotel.
