JUNIOR CHEF ACADEMY GRADUATION 2011
Students from the Juniorchef Academy will be graduating on Monday 14 February 2011, with certificates being awarded to all students by an industry recognised chef.
Throughout the year they have gained an insight from instructor, Matt Mowles, on menu planning, basic baking and pastry skills, food preparation and presentation, food hygiene and other areas of this specialised trade.
Having learned how to cook a range of dishes over the duration of the course, students will prepare a graduation meal for invited guests. A three course dinner has been devised by the students showcasing a range of their skills. They will be preparing the following meal for guests:
Starter – choice of Tomato soup with croutons and drizzled with basil oil, breaded fish cake with mixed leaves and homemade tartare sauce or roasted vegetable and goats’ cheese bouché with pesto dressing and rocket.
Main – choice of poached breast of local free range chicken with chorizo and sweet pepper with oyster mushroom sauce, baked sea bass with cucumber and Noilly Prat dill cream sauce or Wild mushroom and spinach lasagne with dressed salad.
Dessert – a choice of poached pear with vanilla ice cream in tuille basket and raspberry coulis or chocolate bread and butter pudding with marmalade sauce.
The idea behind the Academy is to develop and nurture a culinary interest among young cookery enthusiasts, and to enable students to experience the duties and the life of a chef in the industry by learning in the professional environment which the Suffolk New College training kitchens provide. The Academy will serve as an excellent bridge between catering studies in school and Further Education, but will also as an enjoyable and rewarding experience for all involved.
The Junior Chefs’ Academy is an award-winning training programme devised by the Compass Group and run in conjunction with select Further Education Colleges in the UK. Its aim is to provide young people, aged 14-16, who are interested in pursuing a career in the catering industry, with a basic grounding in food preparation and cooking.
